David DaTar, When the hymn says 'How I proved him o'er and o'er' it means over and over again I have experienced the Faithfulness of God's word when I trusted my life to it.

The verse means yes, I have found over and over again that each time I trusted Jesus (rather than trust self, people or allowed fear to take control etc ) I have ALWAYS found rest, joy, solution to my problems. So I have proved by reason of experience many times over that its sweet to trust Jesus!
